Basic Oven Omelet

This oven omelet was delicious. It reminded me of a breakfast casserole without the hash browns or toast.  The original version called for diced ham and did not have veggies. You could also add green peppers and some salsa for a Mexican version.  Lots of room to play here!

10 large eggs 
2 cups milk
1 cup grated Parmesan cheese
6 slices bacon
4 oz fresh mushrooms
dried parsley
1 teaspoon salt
Freshly ground black pepper

1. Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish with olive oil or nonstick cooking spray.

2. Beat the eggs in a large bowl and whisk in the milk. Stir in the cheese, diced ham, and parsley. Season with the salt and pepper and pour into the prepared pan. (At this point the casserole can be covered and refrigerated for up to 24 hours.)

3. Bake for 45 minutes, or until the top is slightly golden and a knife inserted in the middle comes out clean. Let cool for 5 minutes before slicing. Serve hot.

Apple Strudel Muffins

Delicious! I found these on Allrecipes.com and they were wonderful. I made a double batch - mini muffins for work ("they're like vitamins!") and big muffins for home.  Awesome.



Here's the recipe:

Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup white sugar
2 eggs
1 1/4 teaspoons vanilla
1 1/2 cups chopped apples
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Directions
1.Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
2.In a medium bowl, mix flour, baking powder, baking soda and salt.
3.In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
4.In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
5.Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

Easy Cinnamon Butter Buns



Inspired by Baked Bree, I pulled these together the other weekend. And the husband demanded a repeat the next day, so I guess they're good!

Here's what you need:
1 can Pillsbury Simply Buttermilk Biscuits
1/4 c butter, melted
cinnamon
brown sugar
powdered sugar
splash of milk

Roll the biscuits out a bit with your rolling pin.  Spread with butter, top with cinnamon and sugar.  Roll the biscuit, and then slice into thirds. Put in cupcake pans, edge up. 

Bake as directed. 

Let cool a bit, then mix powdered sugar and milk. Drizzle icing over biscuits. Enjoy!

Cinnamon Rolls

Cinnamon Rolls
Adapted by Our Best Bites from Allrecipes

Dough
1 cup milk
4 Tbs butter, cut into chunks
3 1/4 - 3 1/2 cups all-purpose flour, divided
1 (.25 ounce) package instant yeast (about 2 1/4 tsp)
1/4 cup white sugar
1/2 teaspoon salt
1 egg

Filling
1 cup brown sugar, packed
1 1/2 tablespoon ground cinnamon
1/2 cup butter, softened

Icing
1 1/2 C powdered sugar
2 T melted butter
1/2 tsp vanilla
1-2 Tbs milk

Dough: Place milk and 4 Tbs butter in a microwave safe bowl. Heat on high for 1 minute 30 seconds. Butter should be at least partially melted. Stir and set aside. In a large mixing bowl whisk together 2 C flour, yeast, white sugar, and salt. When milk mixture has cooled to warm (not hot) add it to the flour mixture along with the egg while the beater (paddle attachment for those using a stand mixer) is running. Beat until well combined, about 1 minute. (Switch to the dough hook now) Add remaining flour only until dough barely leaves the sides of the bowl. It should be very soft and slightly sticky. Continue to let the dough knead for 5 minutes. If you are not using a stand mixer, turn dough out onto floured surface and knead for 5 minutes by hand. Turn dough out onto a floured surface and let rest for about 10 minutes while you make the filling.

Filling: make sure butter is softened well. Mix with brown sugar and cinnamon.

Assembly: Roll dough into a rectangle about 12 x 14 inches. Spread brown sugar mixture (it will be slightly thick, you might have to "crumble" it) over the surface and use your fingers or the back of a spoon to gently spread around. Roll up from the longer side of the rectangle and pinch edges closed. Score the roll into 12 equal pieces and then cut into rolls. Place in a 9 x 13 pan that has been sprayed with cooking spray. Cover pan with a clean towel and let rise in a warm place for about 30 minutes. In the mean time, preheat oven to 350 degrees.

When rolls have finished rising bake for 15-20 minutes or until light golden brown. If desired spread with icing while still warm. Makes 12 rolls.

Cinnamon-Apple Stuffed French Toast

Even my husband liked this - and he's not one for trying something "different"! I loved it because it was a good and delicious way to use my free apples - and my son loved it too.  A hit all the way around.

We made a half batch for 3 of us - 1 sandwich each, plus sausage on the side and maple syrup to top it all.

1/4 c. butter
2 apples, peeled and cubed
2 T. brown sugar
2 t. cinnamon
4 oz. cream cheese, room temperature
12 slices thick, hearty bread (we used Dutch Country butter top bread)
6 eggs
1/2 c. milk
1 T. vanilla
1/4 t. cinnamon
Extra butter for the skillet

1. Melt 1/4 c. butter in a small skillet. Add apples, brown sugar and cinnamon. Cook 5-8 minutes until apples start getting tender.
2. In a bowl, add cream cheese and apple mixture. Stir until well combined. (This can be made the night before and kept refrigerated.)
3. Add about 2 T. filling to the center of one piece of bread. Spread out a little but don’t go all the way to the edges. Top with another slice of bread to make a sandwich. Repeat with all.
4. Whisk together eggs, milk, vanilla and cinnamon. Dip sandwiches in egg mixture as you would for regular French toast. Cook in a hot, greased skillet, 3-4 minutes per side.

Apple Cinnamon Oatmeal

I'm not feeling so hot today, I have my son's awesome cold that he decided to share. 

So I stayed home from work, sent my son to daycare and napped the morning away. This afternoon, oatmeal was calling my name, so I decided to give this recipe from Lauren's Kitchen a try.  It was very good, especially with the loads of sugar and cinnamon I added to it! 

Ingredients:

1 cup of oats
2 cups of milk
2 tablespoons of brown sugar
1 tablespoon of vanilla
pinch of salt
1 chopped apple

Add oats, chopped apple and milk to stoneware, and then put in brown sugar, vanilla and pinch of salt; stir to combine. Cover and cook on high for 1-2 hours or low for 2-3. Check consistency of oatmeal and add milk as needed; garnish with cinnamon

Applesauce Pancakes

My son loved these!  I kept hearing him say "Mmmmm!"

I used cinnamon applesauce and omitted the cinnamon. I'd like to try it using regular applesauce with added cinnamon and see how they turn out also.

2 eggs
2 c flour
1 c milk
1 c applesauce
1/2 tsp ground cinnamon
1/4 c vegetable oil
2 T sugar
2 T baking powder
1 tsp salt

Beat eggs until fluffy. Beat in remaining ingredients just until smooth. Heat griddle or skillet over medium heat or to 375 degrees. (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Grease griddle. For each pancake, use slightly less than 1/4 cup batter. Cook pancakes until bubbly on top and dry around the edges. Turn to cook other sides until golden brown.

Waffles

Ingredients
2 cups all-purpose flour
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
1 1/2 cups warm milk
1/3 cup butter, melted
1 teaspoon vanilla extract

Directions
1.In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
2.In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.
3.Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

Scrambled Egg Muffins

1/2 pound bulk pork sausage
12 eggs
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 cup shredded Cheddar cheese

Directions
1.In a skillet, cook the sausage over medium heat until no longer pink; drain. In a bowl, beat the eggs. Add onion, green pepper, salt, pepper and garlic powder. Stir in sausage and cheese.
2.Spoon by 1/3 cupfuls into greased muffin cups. Bake at 350 degrees F for 20-25 minutes or until a knife inserted near the center comes out clean.

Note - I froze half, refrigerated the rest for tomorrow morning breakfast.  The little bit I tried tonight seems spicy (too much so for my husband?).

Pancakes

This has been my go-to recipe for pancakes the last few times. Pretty good, and easy to make.  Straight from allrecipes.com.

Ingredients
3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
cooking spray

Directions
1.Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
2.Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
3.Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Quick Crustless Quiche

This turned out pretty well!  I need to figure out how to incorporate the flour a little better - I had some crunchy flour spots in the crust, but otherwise seemed to be a cross between a quiche and a breakfast casserole (sans potatoes/bread).  I got it from Allrecipes.com and make my own modifications (ham, mushrooms, peppers, green onions).  Delicious.

Ingredients
8 slices bacon
4 ounces shredded Swiss cheese
2 tablespoons butter, melted
4 eggs, beaten
1/4 cup finely chopped onion
1 teaspoon salt
1/2 cup all-purpose flour
1 1/2 cups milk

Directions

1.Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

2.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.

3.Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan.

4.Bake in preheated oven for 35 minutes, until set. Serve hot or cold.
