Menu Plan Monday
Frugality reins again. Last week was a trip to Aldi - $42 total! One additional trip to IGA for $18 and the grocery budget last week ended up being a whopping $60. Fantastic! Hoping to keep to the $40 that we spent last week, I would be a very happy Mom.

Applesauce Pancakes
From The Sisters Cafe
My son loved these! I kept hearing him say "Mmmmm!"
I used cinnamon applesauce and omitted the cinnamon. I'd like to try it using regular applesauce with added cinnamon and see how they turn out also.
2 eggs
2 c flour
1 c milk
1 c applesauce
1/2 tsp ground cinnamon
1/4 c vegetable oil
2 T sugar
2 T baking powder
1 tsp salt
Beat eggs until fluffy. Beat in remaining ingredients just until smooth. Heat griddle or skillet over medium heat or to 375 degrees. (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Grease griddle. For each pancake, use slightly less than 1/4 cup batter. Cook pancakes until bubbly on top and dry around the edges. Turn to cook other sides until golden brown.

Parmesan Potato Wedges
Very good! Easy and both the hubby and I enjoyed them. Courtesy of Lynn's Kitchen Adventures. I'm sure these would be good trying different flavors as well. I subbed in olive oil for the canola oil that Lynn called for.
4 potatoes
2 teaspoons canola oil
1/2 cup grated Parmesan cheese (this is the stuff in the green can, not the real stuff)
1 teaspoon dried basil
1 teaspoon seasoned salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
Cut each potato lengthwise in half. Cut each half into wedges. In a large bowl, sprinkle potatoes with oil; toss to coat. Combine the remaining ingredients. Add to potatoes; toss to coat.
Arrange potatoes in a single layer on a 15-in. x 10-in. x 1-in. baking pan. Sprinkle with any remaining coating. Bake at 350° for 45-55 minutes or until golden brown and tender.

Beef Dip Sandwiches
Courtesy of Joelen... I only used 1/2 cup of soy sauce, I forgot the bay leaves and it was still delicious! And very nice to drop on the crock pot and check on at the end of the day without worrying that it was overcooked!
4 pounds beef chuck roast
1 tablespoon minced garlic
1 tablespoon dried rosemary
3 bay leaves
1 cup soy sauce
6 cups water
Directions
1.Place roast in slow cooker. Season with garlic, rosemary, and bay leaves. Pour in soy sauce and water. Cook on low setting for 6 to 10 hours. Unlike most roasts, the longer the better.
